At the end of Episode III you see the Clone Troopers turning on and killing their Jedi Generals, and Darth Vader and the Emperor continued the hunt and destruction of the entire Jedi Order. When Luke resolves to learn the ways of the Force and become a Jedi like his father, he becomes the New Hope. So with the passing of Yoda the Jedi were indeed extinct for a short period of time. Luke defeated his father, Vader, on the Second Death Star and officially became a Jedi, when his father was redeemed, and died shortly thereafter, the Old Jedi Order was finally dead, and Luke was the only remaining Jedi having just achieved knighthood.
